Healthy Kids Meals - Summer Treat #1

With the Brisbane weather starting to warm up here's a healthy summer treat for the kids.

It's mulberry season and our tree is overflowing so we are currently using mulberries with a few strawberries for this recipe. Our son loves these on a hot summers day and I am sure your kids will as well!

Yogurt popsicles with a berry swirl

Ingredients

500 grams greek style yogurt, low fat.

1 teaspoon pure vanilla essence.

1/3 cup honey.

Approx 300 grams fresh berries, any type.

Method

1. Blend the yogurt, vanilla and honey in a blender then pour into a jug.

2. Add berries to the blender and return approx 1 cup of the yogurt mix and blend until nice and smooth.

3. 1/3 fill popsicle moulds with yogurt mix, then top up with berry mix.

4. Briefly stir with a small item such as a skewer to create the swirl.

5. Place moulds in freezer for approx 1 hour, remove then insert a popsicle stick.

6. Return to freezer for a minimum of 3 hours

7. ENJOY!
